What is “bullet proof” coffee, anyway? It’s a term that, for most people, has come to basically mean hot coffee with a bunch of fat (usually coconut oil and butter) blended up in it. In my home it’s my breakfast pretty much every day.
I’m a coffee drinker, but I’ve never liked to drink it black. Cream and sugar is the name of my game…that is, until recently when I needed to cut sugar and other carbs out of my diet for a time. No sugar (obviously) and no dairy cream. I also knew that incorporating that amount of healthy fat into my diet each day was going to be very good for me. I pile 3 to 4 TBS (you read that right – TBS) of butter and coconut oil into my coffee each morning to this day. I also add a sweetener called Just Like Sugar to keep carbs out of my morning routine, and I add a tad of vanilla extract. I know folks who add other great flavor enhancers that are also nutritious such as real cacao powder and cinnamon. Even if you just add the fats the end result is a creamy and frothy, delicious drink that provides your brain with food and your body with energy long into your morning. If you need some protein in the morning throw in some eggs, bacon or nuts! (Not into the coffee— that would be gross.)
Months ago when I began this routine it took my body a few days to adapt to this amount of fat at one time but it did and it’s been great ever since to start my day with fats and without carbs. We are always telling patients here at Veritas, “You need to up your healthy fats!” Well, this is one delicious way to do that.
P.S. if you do like your coffee black I still recommend you try this. My husband drinks black coffee and will have bullet proof coffee with no sweetener in it about every other morning. He enjoys it even though he doesn’t care for cream, normally.
P.P.S. You can start with 2 TBS of fat and work your way up from there. In fact, if you’re coming from a low fat diet, I recommend this. Also, if you’re incorporating some sugars into your diet, such as coconut sugar, you can certainly use that here. I just like a no-carb approach to my morning.

Bullet Proof Coffee How-To
- Brew yourself some hot coffee
- Get out your blender (if you have a small, single serving blender, that’s perfect!)
- Put your fats, sweeteners and any other ingredients in the blender.
- Pour in one mugs-worth of hot coffee.
- Blend it up for about 10 seconds. (Be careful when taking the lid off…steam has built up inside and it might get ya!)
- Pour the frothy goodness into a large mug.
