When we were on the GAPS diet, salmon patties were on our regular rotation. Now that we’ve transitioned to more of a modified Phase 2 diet, I have hesitated to serve salmon patties, thinking that my family would see that old standard and revolt. As it turns out, they’re not anti-salmon at all. They all loved this recipe and asked for seconds. I served them with this Coleslaw and it was a huge hit.
ingredients
- 2 cans wild caught salmon or a couple of filets
- 1/2 tsp lemon zest
- 1 lemon (juiced)
- 1/2 tsp onion powder or 2 chopped green onions
- 1 tbsp fresh dill or 1 tsp dried
- 2 tsp dijon mustard
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/8 tsp cayenne
- 2 eggs
- 3 Tbs almond flour
- avocado oil for cooking
Avocado Dill Sauce
- 2 tsp lemon juice
- 1 tsp dijon mustard
- 1 tbsp fresh dill or 1 tsp dried
- 2 cloves garlic(minced)
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/8 tsp cayenne
- 1 avocado
- 3 TBSP oil (or as needed)
instructions
- Heat oil to medium high in cast iron skillet.
- Form all ingredients except cooking oil into patties (if using canned, drain it really well). They are very fragile until they’re cooked, so I just scooped out the mixture, made a patty and laid it in the pan to cook.
- cook 5-7 minutes on each side.
serve with avocado sauce on top
For Avocado Dill Sauce
Blend together (or mash with a spoon) all ingredients except oil. Then add oil slowly and stir or blend until consistency looks good.
*Note
If you’re using a couple salmon filets (fresh or frozen) instead of canned salmon just salt and bake them in a 350 degree oven, skin side down until they are done. They will flake apart with a fork when they’re ready. Remove the cooked salmon from the skin and kind of break it up in the bowl and continue with the rest of the recipe as written. The patties may be more wet and even more fragile if made with fresh salmon so just use a large spoon and drop about a 1/4 C of mixture onto the hot pan/oil and flatten a bit with the back of a spoon. Let them cook and carefully flip them. They hold together much better when cooked.
